

The preparation of a good espresso is a real art based on the 4 “M” rule. Which is Miscela (Blend), Macinadosatore (Grinder), Macchina (Coffee Machine) and Mano (Hand). Moak added a fifth one, Manutenzione (Maintenance), because it has a great influence on the final result.
Taste aroma and richness of the final product depend on the Blend, Moak offers a wide spectrum of blends in order to satisfy the various tastes of consumers, even the most demanding ones. The Grinder is chosen based on it’s features, in order to obtain a proper grind level of coffee and avoid impairing the drink’s preparation Additionally, the possible use of such element can have negative effects on the final product such as alteration of organoleptic features or a coffee with burnt taste. To make sure a cup of coffee gets the right balance one also has to choose the most appropriate Machine depending on personal taste and follow the standards of pressure, temperature and quantity suggested by the coffee producer. The fourth “M” corresponds to Mano (Hand), that is the barman’s ability in preparing espresso. Indeed experience allows managing the different stages at best, in order to obtain an excellent coffee in cup.
Moak also recommends the fifth “M”, proper Maintenance. Cleaning and purifying the coffee machine on a regular basis influences taste and aroma of the producer offered to one’s clients.
